OK, so this came on today after some fast motorway driving as I was slowing down. After 10 seconds or so it went off and didn't come back on for the 5-minute remainder of my journey.

Just checked and the coolant looked fine - just above the check mark as usual.

Has this happened to anyone else?

Thanks both, oddly good to hear others have had this too. It was on a slight downhill incline but very shallow and one I drive every day so it wasn't due to the steep angle giving a false reading. Will ignore if it doesn't come back. Obviously the first thing I checked was the engine temperature which was where it is all the time - bang dead centre.

OK I can reproduce this - on the Southbound exit of the M1 at Hemel Hempstead Jn 8. So the good news it's obviously some imbalance with the sensor. If you want to try:

(Obviously do this in the dry, when road is quiet/clear etc)
Come off M1 left lane to HH - enter long right curve at about 55-60mph. At apex of bend accelerate hard out of bend.
Coolant light comes on every time if fast enough. Then goes off pretty quickly when straight.

I am currently having the same issue! Had my v40 almost a year and it's the 3rd time in 4 months the coolant warning has come on! Despite there being sufficient levels of coolant in it. I even drew a line on the tub last time to check for any low levels, the line is exactly where it was last time. So i've just topped it up a little so that the warning light goes away haha. Could it be a dodgy sensor?
